During the holidays, ginger takes up residence at the cookie and juice bar.

The rhizome, or underground root, of ginger is beloved for the aromatic, powerful punch of flavor it imparts in both sweet and savory applications. Ginger is also beloved in traditional folk medicine concoctions for its anti-inflammatory and antioxidant effects—something everyone could use a little more of during the holidays, generally a time of over-indulgence and runny noses.

While ginger is a perennial stir-fry star and marinade VIP, during the holidays, the spice takes up residence at the cookie and juice bar. Edible Capital District turned to a baker and a juice maven for gingery treats that manage to satisfy our sweet tooth and strengthen our immune system with refreshing, zesty ginger.

Tom MacGregor at the Placid Baker in Troy and Amanda Thibobeau at the Saratoga Juice Bar did the honors.
