Butternut Squash

Butternut squash is one of our favorite fall vegetables. This rich, sweet-flavored squash is versatile and can be used from soups and salads to pizza and lasagna. Like other winter squash, butternuts are at their best from early fall through winter.

Look for butternut squash with hard, light-tan rind and a golden orange flesh. Choose one that feels heavy for its size. They range in size from 6 to 12 inches long and weigh between 2 and 5 pounds. The skin should be smooth and uniform in color with a matte surface. This hardy squash can be kept for up to three months in a cool, dry place but do not refrigerate.
