Cinnamon Pork, Apple and Onion Casserole

I have grown up in the Northeast my whole life, but I have not always been in upstate New York. I knew that autumn was a beautiful time of year and that my mom would start buying me apples for my lunch, but it was never my favorite season until I moved up north.

This Cinnamon Pork, Apple and Onion Casserole recipe is a great mid-week option because it's a snap to make, but looks, tastes and feels like a gourmet feast. 

Instructions

Serves 3

3 bone-in pasture-raised pork chops 1⁄2 teaspoon salt, divided
2 yellow onions, thinly sliced
2 apples, thinly sliced
1 tablespoon grass-fed butter 1 teaspoon cinnamon

Preheat oven to 400°.
Sprinkle pork chops with salt. In a large bowl combine onions, apples, butter, cinnamon and 1⁄4 teaspoon salt.
Place half of mixture on the bottom layer of an 11- by 13-inch baking dish. Lay pork chops on top of the mixture and then finish with a layer of apples/onions on top. Bake in oven for 25–30 minutes or until pork has reached an internal temperature of 160°.
