This local breweries manifesto states that they “rebel against mediocrity.” Clearly! Using farm-fresh ingredients and world-class malts, they create ales for the craft beer enthusiast.

We selected their Coconut Cream Stout- it’s rich and creamy with a hit of tropical coconut in a deeply complex stout beer base. Hints of chocolate and coffee round out the flavor profile for this hearty, easy-drinking award winner. Rated 4.0 Exceptional on Beer Advocate and a national best-seller featured on Tavour, this brew provides a rich counter balance to Jake’s Cheddar in this recipe.

It all started with a simple idea ... Jake believed that well-crafted food is inherently good and tastes better. But most of the Gouda cheese he found locally was sealed so tight that it was as if all the goodness had been squeezed right out of it. Together with his wife, Sylvia, they embarked on a new adventure and began making cheese in the Dutch tradition with milk sourced from their own farm in Deansboro, NY. Turned daily on pine planks to ensure uniform age and perfection for at least sixty days and then it’s covered with a cream coating instead of a wax seal. The result is one of New York’s finest traditional style Gouda cheeses.

Jake also makes the Sharp Cheddar Cheese used in this issue’s Cheddar Beer Soup. We selected Jake’s for its incredible quality and value. Like his other cheeses, it’s handmade with raw milk- no high temp pasteurization here. This delicious version has a rich, classic cheddar flavor - perfect for this creamy soup!
