Tender enough to eat raw and hardy enough to stand up to a sauté, Swiss chard is one versatile green. It’s one of the first spring greens ready for harvest, making it one of May’s best farmers’ market finds.
HOW TO BUY
Look for chard with deep green leaves and firm stems. Greens that were harvested young will be very small and can be eaten raw in salad. Larger greens have thicker stalks and leaves that are best sautéed, steamed and pickled. Pass over any chard that is wilted or has suffered severe pest damage.
HOW TO STORE
Wrap chard loosely in a damp paper towel and store in an unsealed plastic bag in the crisper. It will keep well for a few days up to a week. Younger, smaller leaves will turn faster.
