We love to dress up our fresh produce with one of our favorites, Herbed Honey Mustard Dressing.
Vinegar and olive oil-based salad dressings are light and add a little zip to everything. It’s great on greens, vegetables and fruits. You can change up the flavor by using different vinegars or by swapping out Dijon mustard with your favorite mustard. Have fun with the endless combinations of herbs but don’t forget the local honey. Once you start making homemade vinaigrette, you won’t go back.
We hope you enjoy our cooking videos. A special thank you to Honest Weight Food Co-op for letting us use their Teaching Kitchen and supplying the ingredients.
This dressing packs a lot of flavor and can also be used as a meat marinade or veggie dip.
½ cup extra-virgin olive oil
¼ cup chopped fresh herb leaves (we like basil, dill, parsley, thyme or any combination of herbs)
¼ cup white wine vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
1 teaspoon shallots, chopped
Add all the ingredients to the bowl of a food processor. Pulse for 1 minute until the herbs are finely chopped. Store the dressing in the fridge for up to 2 weeks.
