Matthew Hall and Christian Fignar source everything locally, from their produce to their wine list. They even have an expansive garden they tend with the help of executive chef Jeffrey Strom. Whatever they can’t grow, they contract out to local producers. Their cocktails utilize small-batch artisanal New York spirits, and all beers on tap are from the Empire State. Hall created the Maple Bourbon Smash to add a spirited bang to winter’s farewell. 

Instructions

2 ounces Hudson Baby Bourbon
1⁄2 ounce Catskill Mountain Sugar House organic maple syrup 1 lemon wheel
2 orange wheels
4 dashes aromatic bitters
1 1⁄2 ounces soda water

Muddle the lemon and one orange wheel with the bitters and syrup, add the whiskey and shake. Pour into a rocks glass over ice and top with soda water. Garnish with remaining orange wheel.
