For the vinaigrette
- 1 cup blueberries
- ½ cup balsamic vinegar
- 1 tablespoon maple syrup (dark/very dark)
- ½ teaspoon salt
- Pinch of black pepper
- Juice from 1 lemon
- ½ teaspoon vanilla extract
- ½ cup extra-virgin olive oil
For the Salad
- 4 cups arugula
- 1 tomato, chopped
- ½ small red onion, chopped
- ½ cup sweet corn kernels
- 1 cup blueberries
- 4 ounces smoked salmon
- 1 ounce goat cheese, crumbled
Preparation
For the Blueberry Maple Vinaigrette
Place all ingredients except the olive oil in a food processor or blender. Mix on high for 30 seconds. Slowly add olive oil and mix on high until combined. Drizzle over Summer Salad.

Place all ingredients in large bowl and toss to combine.
